Résumé
Alors que la saison agrotouristique 2020 était en préparation, les acteurs de l’industrie du cidre au Québec découvrent abruptement les risques d’affaires associés à l’agrotourisme. La crise sanitaire provoquée par la COVID-19, en mars 2020, crée une situation inédite pour les cidriculteurs et cidricultrices , ce qui les contraint à faire preuve de résilience individuelle, donc à déterminer et à exécuter des actions opérationnelles dont la portée devient collective dans la redéfinition de l’offre d’expérience agrotouristique. Avec la nouvelle donne sanitaire, les modèles d’affaires agrotouristiques cèdent le pas à une forme de modèle hybride où l’offre d’expérience agrotouristique est recentrée autour d’enjeux comportant des échanges communicationnels soutenus par les médias sociaux, entre les cidreries et les visiteurs, notamment l’achat local. L’émergence de boutiques en ligne transactionnelles offre désormais aux visiteurs la possibilité d’acheter les produits de la cidrerie tout au long de l’année. Le modèle agrotouristique qui se profile montre que, dans un avenir prévisible, les visites à la cidrerie pourraient survenir à l’occasion d’événements ponctuels.

Abstract
While the 2020 agritourism season was being prepared, the actors of the cider industry in Quebec were abruptly discovering the business risks associated with agritourism activities. The health crisis provoked by the COVID-19 pandemic in March 2020 breeds a new situation for cider producers, forcing them to show individual resilience, and therefore to identify and execute operational actions whose scope becomes collective in redefining the overall agritourism experience offer. With the new health situation, agritourism business models are giving way to a hybrid one where the customer experience offer is refocused around issues involving communication exchanges supported by social media, between cideries and visitors, such as local food purchasing and consumption, in particular. The rapid emergence of transactional online stores now offers visitors the possibility of buying products throughout the year. The emerging agritourism model indicates that for the foreseeable future, visits to cideries could take place on the occasion of one-off events.
