Résumé
Notre étude contribue au renouvellement de l’analyse de la filière vitivinicole à partir de l’exemple du vignoble bordelais. Les adaptations au sein de la filière passant par une évolution progressive des exploitations individuelles, nous fondons notre analyse sur leur business model (BM), modèle décrivant de façon systématique les processus de création et de captation de valeur. Nous le combinons avec le modèle du « trépied de la stratégie » pour comprendre dans quelle mesure l’environnement institutionnel et concurrentiel, ainsi que les ressources disponibles, peuvent influencer les BM individuels. Notre proposition de recherche est que leur cadre institutionnel contraint les domaines à adopter un positionnement des ressources et, in fine, un « BM archétypal », tout en leur laissant une certaine capacité de variation. Il contribue à ériger des barrières à l’entrée figeant la hiérarchie des domaines, favorisant les plus prestigieux, au détriment des autres. Certains producteurs peuvent décider de contourner ce cadre institutionnel pour mobiliser des ressources spécifiques, un positionnement concurrentiel différencié et, donc, un BM innovant. Néanmoins, notre analyse ne nous permet pas de conclure que ces BM innovants parviennent à modifier en profondeur le BM archétypal.

Abstract
Our study contributes to the renewal of the analysis of the wine industry from the example of the Bordeaux vineyard. As, the adaptations within the sector are based on a progressive evolution of individual exploitations, we base our analysis on the business model (BM) framework, that describes in a systematic way the processes of value creation and capture. We combine this with the “strategy tripod” model to understand the extent to which pressures from the institutional context, accessible resources and competitive positioning can influence individual BMs. Our research proposal is that the institutional context forces estates to adopt common positioning, resources, and ultimately an archetypal BM, while leaving them some capacity for variation. It contributes to raising barriers to entry, freezing the hierarchy of domains, favouring the most prestigious ones to the detriment of others. Some producers may decide to bypass this institutional framework in order to mobilise specific resources, adopt a differentiated competitive positioning and, therefore, an innovative BM. Nevertheless, our analysis does not allow us to conclude that these innovative BMs manage to modify the archetypal one in depth.

Resumen
Nuestro estudio contribuye a la renovación del análisis de la industria vitivinícola a partir del ejemplo del viñedo bordelés. Las adaptaciones dentro del sector se basan en una evolución progresiva de las explotaciones individuales, y basamos nuestro análisis en sus business models (BM), describiendo de forma sistemática los procesos de creación y captura de valor. Combinamos estos elementos con el modelo del «trípode de la estrategia» para comprender hasta qué punto las presiones del entorno institucional, los recursos accesibles y las posibles posiciones competitivas pueden influir en los BM individuales. Nuestra propuesta de investigaciónes que su contexto institucional obliga a los dominios a adoptar un posicionamiento común, recursos y, en última instancia, un BM común, al tiempo que les deja cierta capacidad de variación. Contribuye a erigir barreras de entrada, congelando la jerarquía de los dominios, favoreciendo a los más prestigiosos, en detrimento de los demás. Algunos productores pueden optar por ignorar este marco institucional para movilizar recursos específicos, un posicionamiento competitivo diferenciado y, por tanto, un BM innovador. Sin embargo, nuestro análisis no nos permite concluir que estas BM innovadoras consigan modificar en profundidad el arquetipo de BM.
